1 cup deseeded dates soaked in 1 cup of hot water for 2-3 hours & blended to a puree
1/2 Cup dried goji berries
1/2 cup unshelled walnuts
1 cup almonds
1 cup trail mix (pumpkin seeds, melon seeds, dried plums, prunes & other berries)
1/2 cup cashews
1/2 cup pistachios
1/2 cup dried coconut, grated
1/4 cup white sesame seeds (slightly roasted)
1/2 cup oats powder OR sattu (slightly roasted)
1 tablespoon raw/unrefined sugar or coconut Sugar (optional)
1/2 tsp cardamom powderÂ
Salt to taste
In a heavy bottomed pan, dry roast all nuts (except dried berries) till they turn crisp, golden brown & aromatic, once roasted keep aside.
In another pan, cook dates puree till it thickens in consistency.
Add the roasted nuts, goji berries, roasted sesame seeds, roasted oats or sattu powder, cardamom powder & pinch of salt into the thicked cooked dated puree.
Mix well to combine.
Transfer into a mold that has been lined with baking paper.
Refrigerate for 60 - 90 minutes and cut into desired shapes & serve to your children.
